🧪 PROCESS (WHAT MAKES THIS SPECIAL)
This is a controlled experimental lot from Finca Manantiales in Valle del Cauca, where precision fermentation is used to push flavour complexity. Only selectively harvested ripe Yellow Bourbon cherries are used, ensuring high sugar development and structural clarity. The coffee undergoes a 50-hour anaerobic yellow honey fermentation, enhanced with Gesha fermentation lixiviates, introducing additional aromatic complexity and floral-fruit layering. Drying is carefully managed using a hybrid system of natural and mechanical silo drying, with strict temperature control below 40°C to stabilise water activity and reduce bitterness by lowering chlorogenic acid presence. The result is a highly refined, multi-layered cup that merges tropical sweetness, floral wine-like acidity, and caramel depth into a clean, structured expression.
