🧪 PROCESS (WHAT MAKES THIS SPECIAL)
Produced as part of Ipanema Coffee's prestigious Premier Cru Collection, this coffee represents some of the finest lots harvested from the highest elevations of the historic Rio Verde Estate.
Founded in the 1870s, Ipanema is one of Brazil's most respected coffee producers and has become known for pushing the boundaries of specialty coffee through innovation, experimentation, and meticulous quality control.
Beginning in 2018, the Premier Cru program was created to showcase exceptional micro-lots from the estate's oldest coffee-growing areas. This particular lot undergoes a carefully managed natural wild fermentation process, allowing native microorganisms to enhance sweetness, structure, and fruit complexity while preserving the distinctive characteristics of Yellow Bourbon.
To preserve quality from farm to roastery, these coffees are packed using nitrogen-flushed vacuum-sealed technology, a practice rarely used in green coffee. By removing oxygen before export, freshness and cup quality are maintained at an extraordinary level, reflecting the care and precision behind every stage of production.
The result is a coffee that combines Brazil's signature sweetness and body with an elevated fruit profile rarely encountered in traditional Brazilian coffees.
